Beets are one of my most favorite veggie juice additions. They are relatively inexpensive, one beet yields tons of juice, and they don’t require a lot of prep-just lop off the tops and slice them to fit in the juicer. They also yield a delightful, subtly sweet and earthy flavor that covers up and complements the bitterest of veggies and the earthiest of greens, while bringing out the subtle sweetness of other veggies and fruits. The gorgeous dark red also covers almost any other flavor, so kids and picky eaters don’t know if there are greens or anything else in there-sneaky, sneaky.

The best part about beets, though, is that they bring a wealth of nutrients and health benefits to the table-or glass. Beets protect your liver and help to detoxify the body by moving things through the digestive tract. Beets also lower cardiovascular risks by naturally lowering blood pressure-especially when consumed raw and concentrated, as with juice. Beet juice is a good source of anthocyanins, the antioxidants that give beets their color, and naturally occurring nitrates, which can improve blood flow through the body by opening up blood vessels. In this recipe, the ginger helps to soothe the stomach and add zest, while the carrots and apple complement the flavor of the beet juice and add a little sweetness and some detoxifying nutrients of their own.

Ingredients

  • 1 large beet
  • 2 carrots
  • 1 sweet apple, such as Fuji
  • ½ inch piece of ginger

Recipe

  • Rinse all produce
  • Remove tops from beet and carrots
  • Remove stem and seeds from apple
  • Cut produce to fit in juicer
  • Juice all produce
  • Clean up quickly, as beet juice will stain surfaces, juicers, and clothing
  • Enjoy!
