Easter Bunny Delight

This juice is perfect for keeping the Easter bunny (and his helpers) healthy and hydrated for the big night. Fit for bunnies, this juice contains celery and carrots for hydration, eye health, and cardiovascular support. To up the energy and health quotient, this juice also contains a generous helping of one of our lesser-used greens, Swiss chard.

Swiss chard is in the same family as beets, spinach, and quinoa, and research is beginning to show that these foods contain vitamins not readily available from most other foods. Unlike most greens, Swiss chard has a red pigment that comes from carotenoids and helps with nervous system health. Recent studies have also shown that Swiss chard has the unique ability to help regulate blood sugar, even in individuals with diabetes. In some cases, Swiss chard has even shown the ability to help pancreatic cells regenerate, which could prove to be helpful in combating pancreatitis and other degenerative diseases of the pancreas. Swiss chard also supports bone health and can be helpful in reducing inflammation, as with allergies and spring illnesses.

  • 8 leaves of Swiss chard
  • 2 carrots
  • 2 celery sticks

  • For this recipe, it is recommended that you use a masticating juicer to get the most juice and nutritional benefit. If a masticating juicer is not available, carrots and celery should be juiced first, followed by the Swiss chard for the most benefit.
  • Rinse all produce thoroughly, leaving Swiss chard to soak in order to remove all dirt from between leaves
  • Juice all produce
  • Serve in a decorative, medium sized glass
  • Leave a glass out for the Easter bunny to start a new Easter tradition!
