Eggplant and Carrot Juice


For many people, eggplant is considered to be an ingredient which is best when breaded and smothered in cheese and tomato sauce. And although we’d be hard-pressed to deny the deliciousness of it in this traditional context, we’d like to make a case for it as a juicing ingredient. Consider:

Eggplants are a good source of vitamins. Specifically, they contain appreciable amounts of vitamin C and vitamin B1. Eggplants also contain a variety of phytonutrients, proteins and minerals. Additionally, eggplants boast a variety of antioxidant compounds. Antioxidants are believed to lower your risk of developing cancer. This is because they block the action of free radicals. Free radicals can meddle with your cellular structure and cause all sorts of cell mutations. You don’t want this. So juice eggplant!

The carrots in this recipe add a degree of sweetness and provide you with a healthy dose of beta carotene. Drink enough carrot juice, and you’ll develop a nice glow this spring well in advance of beach season. And you thought juicing was just healthy and delicious!


  • 1 eggplant
  • 2 Apples
  • 1 Celery Stalk
  • 3 Carrots


  • Rinse all ingredients with water.
  • If you were cooking with eggplant, you’d probably skin it. But for juicing purposes, all you have to do is cut it into manageable chunks that will fit in your juicer.
  • Juice everything up and enjoy. To your health!
