Fennel is rich in antioxidants, and there’s evidence which suggests it has anti-inflammatory properties as well. Additionally, it’s a good source of vitamin C and should be freshly available at your local farmer’s market – fennel is in season until about the middle of spring.


  • 1 Fennel Bulb (stems and all!)
  • 2 Apples of your favorite tart variety
  • 1 Pear
  • 1 Mango
  • 1 Celery Stalk
  • Fresh Ginger to taste – about three tablespoons ought to do the trick


  • Wash all ingredients thoroughly.
  • Core the mango and remove skin. This is a bit tricky but well worth the extra effort.
