This spring green juice makes use of a whole slew of fresh ingredients that should now be popping up at your local farmers market. Even the few that may still be difficult to purchase at markets in your locale should be easily picked up at a conventional supermarket. Local sources of kale and parsley have probably been available for a month or more. And apples are available just about year round. The ginger and lemon may be a bit more difficult to procure locally, but we recommend that you’re sure to include them – they’re what make this recipe really shine!


  • ½ a lemon
  • 1 Apple of your favorite variety
  • 1 bunch of kale
  • 4 celery stalks
  • Parsley to taste
  • Ginger to taste


  • Juice it all up! The parsley can be a bit bitter, so wait until you’ve juiced the other ingredients before you add it. That way, you’ll have a good idea of the juice’s complete flavor composition first! Healthfulness is important, but so is enjoyment!
