Sweet Potato Immune Boost

This juice is delightfully sweet and just the right color for the season. The sweet potatoes are an interesting base, but juicing them yields more than you would expect, and extracts the sweetness. The red pepper adds a mildly sweet touch, with the ginger for tang. The sweet potatoes and celery are loaded with dietary fiber and potassium. They also feature plenty of vitamin B6 and vitamin C, which are both immune boosters. The red peppers and carrots add even more vitamin C. Beta carotene, a powerful antioxidant, is what gives the carrots and sweet potatoes their orange color. Ginger has antioxidant properties as well, and has been known to balance out the immune system. As the weather turns cold, and the coughing and sneezing starts, give yourself the give of an added immune boost with this delicious and festive juice.


  • 1 small or medium sweet potato
  • 2 carrots
  • 1 large red pepper
  • 2 celery sticks
  • ½ inch piece of ginger


  • Cut vegetables if necessary for it to fit into the juicer
  • Juice all vegetables
  • Shake juice to blend all flavors
  • Drink up!
