The Bugs Bunny: Use the Whole Carrot

Summary
This is a supper simple sweet and tasty vegetable juice drink. In this recipe you use the whole carrot, green leafy tops and all. You get all the sweetness, fiber and minerals from the carrot along with a zesty hit of vitamin C and the fiber benefits of a juicy apple. Without the carrot greens this juice may be a little too sweet to be called a vegetable drink. Alternatively, some red lettuce can take the place of the carrot tops for an added savory note.
Ingredients 

  • 3 carrots
  • 1 apple
  • 1/2 a lemon
  • Greens from the carrots or a few leaves of red lettuce
Instructions 

  1. Wash and chop your carrot and separate the green tops if you are going to use them in the juice.
  2. Remove the core of the apple and slice it into a suitable size for your juicer.
  3. Peel the lemon and chop up the soft inner fruit (make sure all open cuts are covered or this will sting)
  4. Pass all of your ingredients through the juicer and serve them over ice.
