However, coconut milk should be consumed in moderation, as it does contain some saturated fat. Bananas and pineapples are also high in sugar.   • 1 cup spinach
  • 1 kale leaf
  • ½ cucumber
  • 1 cup plus ½ ring pineapple
  • 1 banana
  • 1 cup coconut milk
  • Ice if desired
  • Sprinkle of coconut for garnish


  • Rinse all produce thoroughly
  • Juice cucumber, spinach, kale, and one cup pineapple
  • Pour juice into a blender with the banana, coconut milk, and ice
  • Blend well and taste. If desired, another banana can be added for sweetness
  • Pour into a festive summer glass, sprinkle with coconut, add the ½ pineapple ring for garnish, and serve
