Zucchini Refresher Juice


Hydration is an important component of good health, and this is true year round. But the hot summer months can present a particular challenge when it comes to hydration. In the heat, our body perspires more heavily in order to keep our body cool. As a result, it may be necessary to consume extra fluids. Today’s juice is aimed at achieving just this goal. It’s filled with juicy fruits and vegetables and features the currently in-season zucchini.

The Benefits of Zucchini

You may think of zucchini as a vegetable best suited for stir fries and ratatouille. But although zucchini is commonly found on the dinner table, it juices up quite well. And since it’s loaded with minerals like manganese, potassium and calcium, you really ought to consider keeping it on your juicing grocery list. Zucchini is cheap and requires very little preparation prior to juicing. You can buy it locally at a farmers market and should have no trouble storing it in the fridge for four days or so. When combined with the watermelon in this recipe, it is as thirst quenching as it is delicious!


  • 1 Zucchini, large
  • ½ Watermelon, outer rind removed
  • 1 Cup spinach
  • Handful of mint leaves


  • Thoroughly wash all ingredients.
  • Remove the outer rind of the watermelon.
  • Juice the spinach and mint on your juicer’s lowest speed setting.
  • Now set the juicer on high and juice the remaining ingredients.
  • Pour the juice over ice and enjoy.
